Homemade Matcha Ice Cream & Fluffy Matcha Pancakes

There’s something comforting about matcha — the earthy aroma, the creamy bitterness, and that soft green color that instantly makes everything feel calmer.


Recently, I finally made my own homemade matcha ice cream, and honestly… paired with warm fluffy pancakes, this might be peak matcha happiness.


If you’re a fellow matcha lover, this recipe is simple, cozy, and incredibly satisfying for a slow afternoon at home.

Fluffy Matcha Pancakes 🥞

Soft, lightly sweet, and packed with rich matcha flavor. These pancakes pair perfectly with yogurt, strawberries, and a drizzle of honey.

Ingredients

Dry Ingredients

  • 70g cake flour

  • 6g matcha powder

  • 4g baking powder


Wet Ingredients

  • 10g granulated sugar

  • 6g melted butter

  • 60g milk

  • 1 egg


Optional Toppings

  • Yogurt

  • Fresh strawberries

  • Honey


Instructions

Step 1: Make the Batter


In a bowl, whisk together:

  • egg

  • milk

  • sugar

  • melted butter


Sift in the cake flour, matcha powder, and baking powder. Mix until smooth and no dry spots remain.

Step 2: Cook the Pancakes


  1. Heat a non-stick pan over low heat.

  2. Pour one scoop of batter into the pan. Cook slowly over low heat until large bubbles appear on the surface.

  3. Flip and cook the other side until golden and fluffy.

  4. Low heat is the key to getting soft Japanese-style pancakes.


Step 3: Add Toppings


Stack the pancakes on a plate and top with:

  • yogurt

  • sliced strawberries

  • a drizzle of honey

Serve warm for the best texture.


Creamy Homemade Matcha Ice Cream 🍦

Rich, smooth, and intensely matcha flavored — this homemade ice cream has a velvety texture without needing an ice cream machine.

Ingredients

  • 50g granulated sugar

  • 3 egg yolks

  • 300g heavy whipping cream

  • 20g matcha powder

Instructions


Step 1: Whip the Egg Yolks

Whisk the sugar and egg yolks together until the mixture becomes pale, thick, and creamy.

When lifted, the batter should slowly fall and leave a visible ribbon shape.


Step 2: Prepare the Matcha Cream

Sift the matcha powder into the whipping cream.

Mix well, then strain the mixture twice for an extra smooth and silky texture.

This step helps remove matcha clumps and creates a more refined ice cream base.


Step 3: Combine Everything

Gently fold the matcha cream into the whipped egg yolk mixture until fully combined.

Avoid overmixing to keep the texture light and creamy.


Step 4: Freeze

Pour into a container and freeze for about 5 hours, or until firm.

For the best texture, let the ice cream sit at room temperature for a few minutes (1 to 2 mins will do) before scooping.
